Soup #2 of 2011-2012 ?
I guess in January of 2011 I had a goal to make three soups from scratch. I may have abandoned that goal along the way because I believe this is soup number two, since Jan of 2011… That is if you count chili as a soup ?
Soup intimidates me, my weakness in the kitchen for some reason. So, this was an ‘impulse cook’, I suppose which most of them are for me. Impulse means – I think of ingredients on hand, search google and create. The recipes end up in the mix for regular cooking, never cooked again or even the trash!
This was a possible repeat recipe. Me and my 4 yr old enjoyed it.
I found a bunch online but this recipe and this recipe seemed to be what I wanted to create.
I usually wing it…
I used ham instead of bacon. I added red bell pepper, frozen fresh parsley and only ended up using one of those potatoes in photo.
