We had lots of brown rice, regular, not minute rice, that we needed to find a recipe for. (I had bought it by mistake.) Typically we make the minute brown rice and mix with salsa or something else to spice it up. Minute rice just works better at dinner time.
So I searched, found and modified (due to ingredients on hand) the numerous crockpot brown rice recipes found online.
The end result was yummy, sweet and just the right consistency. It was a tad crunchy, but that could just be a characteristic of the brown rice.
Crockpot brown rice pudding:
2 cups of brown rice
6 cups of skim milk
1 1/2 cups of light brown sugar
2 tablespoons cinnamon/white sugar, premixed (I just dumped it in)
Mixed it all up in crockpot and cooked
4hrs on high – we can’t leave things alone so it did get stirred a few times.
It makes a lot.
Enjoy hot from crockpot, cold or reheated with whipped cream.
